PRODUCTION





       1.Oenology :
Oenology is the study of the characteristics of the wine.
The wine production is a very old practice in the Bordeaux region.
Some methods, like the combustion of the sulphur to preserve the wine and the use of egg white to clarify it, have been employed empirically.
Some of them are now explained by the chemistry.
Scientific oenology has begun thanks to Pasteur's works.
 

        2.Types of wine :
Legal definition : wine is the product obtained exclusively by the alcoholic, total, or partial fermentation of grapes fresh, crushed or not, or of grape must.
There are dry, semi-dry, mellow and mild wines. The difference is made from the content of sugar (less than 4 grammes of sugar per litre for the dry wine; more than 45 grammes of sugar per litre for the mild wine).
 

        3.Wine in the world :
Several hundred millions hectolitres of wine are producted every year.
In France, the volume producted every year is about 60 million hectolitres.
