GRAPE AND GRAPE-HARVEST







                           Three important elements  really define the character of the wine : the grape used ,the quality taken during the production, and many different exterior factors.

                          * The quality of the soil and the grape variety are very important to the character of the wine. The better quality these two elements are the more excellent the wine is with the time.
                          * The character of the wine, also, depends on the vineyard situation and the weather conditions. As a result, most specialists say vineyards require a moderate climate and they  can't bear altitude (between 0 and 500 meters), they need sun and a few days of rain, except in autumn and during gape-harvests. But, they must also be grown on hills or if not on plains.
                           * The ripeness of the grapes or "véraison": the winegrower, plants, grows, gathers, and makes the wine. It takes many years to give a wine character.
                           * The vintage corresponds to thequality of the wine and the value of the wine. These are the most famous vintages generally. Winegrowers talk about a vintage of 1975, for example.
                           *Traditional grapes-harvest made by hands or with machinetools.Grapes-harvest by hands has a more traditional aspect. It brings a certain warmth to the wine , it is precious.
                            *The correct treatment of the wine is important too. That is to say the clarification and filtration. The wine is said on "colle" when bacteria are introduced into barrels to eliminate solids parts, which are found in suspension in the wine. The filtration consists in making the wine clear. These two actions are strictly regulated. Generaly, beef blood, egg white, suggar or proteins are introduced in the wine.
